First of all here are some sites that will be priceless in the future to you.

The games that I have played/playing on my dual monitors are:
GTR-2
Rfactor
Elder Scrolls IV
Fuel
Armed Assault
Armed Assault 2
Operation Flashpoint
Assassins Creed
Tomb Raider underworld Demo
Racer (the open source racing game. It has built in multi-monitor support)
You can find a lot more games on the websites I mentioned above.

It's a little hard to use softh while using dual monitors. But I've found out that if you tell softh cfg. to -1 for device ID left monitor and 1 for device ID right monitor. I game at 3072 x 768 (or 2880 x 600). So that mean each of my monitors will display part of the screen at 1024 x 768. By default softh uses 3 monitors so, just multiple what resolution u want each monitor to display x 3 (even if your using dual monitors).

1024 * 3 = 3072
960 * 3 = 2880
1280 * 3 = 3840
1440 * 3 = 4320
