Probably 5-7 stages...
If you want near absolute zero, you'll need laser bottle traps. Physics doesn't work like that. You can pour liquid nitrogen on your hand and be fine. It vaporizes before it hits your skin.

The freezing/melting point of helium is 1.1K, which is only achievable by means of advanced scientific equipment. You can just do a long chained phase unit to freeze helium. Also, 3 stages is the most you can do practically. Even then, it's only for benching, and not 24/7 use. Any more than 3 stages and you'll run into cold bugs.
