I would like to attempt to put an OS on the PS3 and I am wondering what I have for options. I know linux is one, but what about a windows based OS? Also I assume you still have access to the main PS3 interface after installing an OS, correct? thanks in advace.

Ive seen XP run on a PS3 but that was under Yellow Dog linux and in a VM I think.

you can install other distros of linux, yellow dog was just made specifically for the ps3. i'm not sure if you can run windows directly on it or not.
and yes you can still use the standard xmb

Yellow Dog is a PPC distro for the most part, and has been adapted to the Cell/PPC64 distro well. Ubuntu also has a PPC64 version with limited packages (Java is a pain to install for PPC, and some other things you need to build from source). If your experienced with Linux I'd reccommend Gentoo, I'll be putting it on my PS3. PPC64 is typically very hard to find binary packages for, so you will end up building from source anyway alot of the time.

Yellow dog is really the only simple to install one (simple as linux goes).
You can not install windows.

Windows in VM you can but that defeats the point.
YDL is really the best solution for the PS3 as it was made for it.
