Let's just hold a min here. Assuming that just because the monitor is HDCP compliant just because it has an HDMI port has bitten people in the past. This one is HDCP capable, but not all monitors are. You will be able to use this monitor with a PS3.

Second the Optical suggestions here, works great. The PS3 will NOT automatically switch to anything, you will have to do it yourself in the sound settings in the PS3. It will auto to HDMI, but will not switch to anything else when plugged in unless you do it yourself

If it works, can you output sound separately from HDMI (as I wont want to use the monitors speakers (if it has any))?
Of course it works. Its HDMI for crying out loud. Sweet set up FTW!
