2. Raid 0 is the most common choice because of the performance increase. The IDE optical drive will have no impact on the RAID setup. 3. You can use an additional HDD for storage. I recommend disconnecting the drive while installing the OS, then connecting it and setting up the drive for storage after the OS has been installed.

Basically:
__________________Raid 0 - twice the read/write speed. same access time. twice the size (2x500GB = one 1000GB drive) twice the chance of losing all your data RAID 1 - same read/write/access time/speed as a single drive. same size (2x500GB = 500GB) half the chance of losing all your data. 0 combines two drives for speed, 1 combines two drives to make a real-time backup as you go. EDIT: FFFFAAAAARRRKKKKK. Always beaten to it on this forum... you can use another SATA drive as a mnual backup and an IDE DVD drive no problem. Since you have a spare SATA drive, I vote RAID 0 for speed and then use the current SATA drive for manual backups.

1. Raid 0 is interleaved - the discs will appear as one big disc, and the data (and therefore load) is spread across for higher performance. If one of the discs fail, tohugh, your entire array and all data is gone. Raid 1 is where the contents of the discs are cloned for redundancy, so if on disc fails, you still have all your data safe and sound.
2. Which one is better depends on what you're after - RAID 0 for pure performance, RAID1 for reliability and backup. And no, the IDE drive shouldn't interfere in any way. 3.Yea, you can have additional HDDs independent from your HD array.

I thought when you Raid 0 2x 500GBS you only get 500GB total space...

No, that's when you RAID 1. Raid 0 combines the capacity of the discs in the array.

Yes, it is called Raid 10, and requires a dedicated RAID card with it's own processor and ram to be efficient. You would want one of the ever popular Perc5i or 6i cards for something like that.
I usually dont post to wikipedia, but their RAID level definitions are accurate: http://en.wikipedia.org/wiki/RAID
