XP Mode allows you to create Windows 7 shortcuts to XP-instanced applications. When you use these shortcuts, there shouldn't be a Virtual PC UI.

Here's a screenshot of two instance of Word. The one in the back is was opened using an XP Mode shortcut.

Interesting. I had trouble getting XP mode to "work", so I went to the installation path and saw VirtualPC, and launched that. I remember VirtualBox allowing you to run windows side by side, similar to that screenshot, but I'm not sure about the shortcut processing.

It's probably more user friendly now, I used the first (and maybe only) version that was publicly available before today's release.

The RC had the same features (to my knowledge)...

It probably did. I didn't read any documentation back then, and just went "rambo" into it. I eventually got it to work though, but that guide makes it easier.

If you have a windows key to use, virtual pc 2007 is better and will run in 7, it gives you more tuning options, allows for VHD bigger than 80GB. You can make an image of a pc with acronis and then convert it to a VHD and then load it in Windows 7. The program should work on win7 home premium but it will say its not supported and may not run right, like with Vista home premium. It runs fine, needed for an old linksys music bridge that wouldn't work with Vista 64Bit home premium.

XP Mode uses Virtual PC.... and you have the ability to open the VM direct with Virtual PC.

QFT, it saved them money and not many people used it (Even then, the people that did usually brought higher end chips), so why put it in? AMD just did because they supply to the budget sector and want to give as many features as they can.
