Should work fine I would think, using Hyper-V as the hypervisor should make all that go easily. I haven't done any of that though, so I'm speaking speculatively; we use VMWare for our servers, and we have only virtualized servers so far. (And I tell people to do it, I don't do it myself!)

Someone said this is basically Windows 7, how true is that?
The Server 2008 and Vista code base were largely identical, which is why so many people were able to use Server 2008 as a home-grown desktop "Professional Edition" instead of Vista. I imagine the similarities between Win7 and Server 2008 R2 outnumber the differences as well. Not sure about the UI though, servers don't really need all that glitzy Aero stuff that makes Win7 so nice.

The only trick is with the anti-virus. Some AV suites require server versions to be run on the a server OS. I know this was the case when I tried to install Symantec 2009 on a windows server 2008 workstation.

This.

I have run Server 2008 and Windows 7 (both x64) and the difference is absolutely minimal. Id just recommend going with W7 if you can. The pain of finding "Server" grade AV is enough of an inconvenience that I wouldnt want to work with it as a 24/7 box.

Fortunately I have a copy of mcAffe enterprise that works on the server, but I know that not everyone has access to that sort of offering.

....anti-virus? I haven't run one for a long time. I call it 'vigilence', but then again, I'm the only person to use my PC. So I know what was downloaded, what it does and where it went.

Well, I'm thinking of grabbing the £30 version of Windows 7, but not keen on the fact that it's an upgrade version. I thought EU versions wouldn't be doing an upgrade version and would, in fact, be retail versions? Bleh. (I'll definately be grabbing the Ultimate edition of Office 2008 for £30)

I'm going to get this simply because it's free and free stuff is great. But Vulcan mentioned that tech students should have some fun with this...but how? I wouldn't know what to do with it, what I can do with it and what I should do with it.

Not sure, I haven't started yet and haven't read up on the place. I'm 28, didn't think I'd be going to school again when I have two kids

If you have a powerful system you can mess around with the different server roles available through Server 2008.

If you have a lot of ram, you can even simulate a whole network. For instance, I am running 3 Vista machines through hyper-v and the main instance of server 2008 as an active directory domain controller, dns and dhcp server. Then I can develop roles and such as if it was a small business network. PRetty fun and you get a lot of working knowledge about how corporate networks run.

Yeah when I used Server 08 I downloaded a program called ServConvert08 and it managed to pretty much turn 08 into a desktop. It has excellent performance and pretty much all the features of Ultimate except for WMC.
