Does the $1000 budget include post-rebate total? Also, why do you have no combo deals? I think that you can fit a GTX 560 Ti in here, and this is what I would go with:

CPU/RAM: Core i5-2500, Patriot Viper Xtreme 4GB DDR3-1600 ($272.98 and $10 rebate)
Motherboard/HDD: ASUS P8P67 B3, Samsung Spinpoint F3 1TB ($199.98)
GPU: MSI Twin Frozr II GeForce GTX 560 Ti ($244.99 and $20 rebate)
PSU: Antec NeoEco 620W ($69.99 and $20 rebate!!)
Optical: Lite-On DVD Burner
Monitor: Asus VH236H 23"
Case: Cooler Master HAF 922 ($99.99 and $10 rebate)

Shipped Total: $1,092.89
After Rebates: $1,012.89

That's about as tight as it's going to get. I don't know if you care or not, but note that that board does not support SLI, just CrossFire. The P8P67 Pro costs an extra $35. If this is just too much, the easiest place to cut is to swap the case for something cheaper - say a HAF 912 - and save $39.99.

Whether or not you go for the GTX 560 Ti, the CPU/RAM combo and PSU are absolute steals! The Mobo/HDD deal is nice too.

Replacing the HAF 922 with the HAF 912 and the GTX 560 Ti with this GTX 460 makes your total $1,025.23 ($935.23 after rebate).
