GTX 560 is your best bet. I don't even understand why people recommend GTX 480. It's hot, demands a lot of power and it's the biggest failure from Nvidia in a long time. Only decent card from the 4xx series is the GTX 460 and the GTX 470 up to a certain extent.

Right now, a single GTX 560 is the best choice because:

-it overclocks very well to GTX 570 performance for $100 less
-no VRM issues
-it's quiet & cool
-can max out everything at 1080p with a few exceptions

2GB 6950 (+unlock) would be my choice, but the GTX 560 is a good option as well
