As far as camera suggestions go, from CLP I recommend the T2i, and 50D.

The T2i is exactly like the T3i you mentioned, only without the swivel screen and wireless flash commander. All the other benefits of the T3i are video-based, and both cameras use the exact same sensor anyways. As you probably know, the T2i uses the same sensor as the 7D and has superb high ISO performance, as well as 1080p video. In short, it is a fantastic camera for the price.

The 50D on the other hand is a semi-pro body (the same camera I use). What it lacks in bells and whistles (does not have video), it makes up for in the UI. The second wheel in the back of the camera can be used for aperture adjustments, whereas all the picture options have quick-access buttons on the top that are faster to access. It's a much faster UI than I had on my XTi, and adjustments on the fly are extremely simple to me now. Of course, there's also the semi-pro benefits like a larger pentaprism viewfinder (T2i uses pentamirror) and partial weather sealing (I've had my 50D in pouring rain with no issues). Unlike the T2i (which takes SD cards), the 50D takes CF cards.

Both are different cameras meant for different tasks. The T2i has more features and a nicer sensor, whereas the 50D emphasizes ease-of-use. It's honestly very hard to say which is the "better" camera, because with either one you're giving something up to gain another.

As far as size goes, any of the Rebels can give you a good size estimate for the T2i. For the 50D however, you should try out the 5D or the 7D instead of the 60D. The 5D and 7D are much closer in size to the 50D, as the 60D was shrunk down and won't give you an accurate idea of the 50D.
Thanks for the help everyone. Since I do some video recording, I may be getting the T2i, but its even more enticing due to this Canon Loyalty Program! I'll also be picking up the 50mm as well. Haha super excited now!

T2i is definitely the way to go then -- and any of the 50mm's will treat you well (I love my 1.4, had the 1.8 but sold it with my T1i to work up to the 60D).

How will the stock lens 18-55 if I remember correctly, fare in say... landscape, scenery, ...food? Would it be better to pick up specific lenses for specific objects?

The kit 18-55mm lens is a great all-purpose lens for the beginner. I'd highly recommend using that first and gauging your wants/needs/lack ofs before buying additional lenses right off the bat.

But speaking from my personal experience: I prefer prime lenses

I see, then I'll be using the 18-55 first before I jump the gun on a bunch of other lenses. Guess I'll report back on my thoughts after I get back from the trip in the summer.
