I just ordered a 2711 and I have one 580. I'm hoping that I should be able to turn up all the eye candy with the exception of crazy AA. But hope I can still use the DOF and stuff in most games...

I have no problems with my OCed 480 and the U3011. Your 580 will rock it. The most vram I ever see used is 1200mb; there is plenty of headroom there.

You'll be fine. Some games you will have to turn down the AA such as Crysis or Metro as the others were saying. I used to run a single 3007WFP-HC (2560x1600) with one GTX285 2GB.

I do highly recommend buying a card with at least 2GB of vmem if you're going to invest in a monitor of that resolution.
