Overclock to 4ghz, and yes bottle neck should be removed. Although for the SBs, you should do atleast 4.5ghz, because you can.

Yes to answer your question in simple terms, you will be just fine.

3GB would be more suitable if you were running 3 monitors.

it will be fine... sb is arguably the fastest clock for clock processor currently available... oc it to atleast 4.5 - .6

you need the bigger memory if you are doing a multi monitor setup

anything bellow 2560 resolution and i'd say no

EDIT: then no.. you don't need it since you won't be needing the extra memory...

yea if your one monitor is a dell ultrasharp then you might need it for some games

Depends, Are you going for 2560 x 1440 (u2711h) then yes by all means this necessitates copious amounts of VRAM. If it isn't a big hassle, purchase the 580's after you sell your current ones. 64 x MSAA ftw. but its not worth it imo, since you already have 580s.

If you are running just one monitor (even if its 25xx x 16xx)... You will be fine just sticking with the 1.5Gb versions.... Silly spending that extra money...

Ok. So for 2560x1440 you would not get the 3GB ones.
I would be able to max out games with the 1.5 GB.
I have to disable v-sync in this monitor for gaming? I am a bit confused with all this
