Crossfire Issues

I've got a bit of a strange issue here. I ended up with enough spare parts to put together an extra box for my kid to play around with. I used this setup:

MSi x48c Platinum Mobo
C2D 6550 2.33GHz
3GB DDR2 800 2GB+1GB Kingston VR
2 x Sapphire HD2600 XT 256MB (Pulled from 2 Mac Pro's)
32GB Avantium SSD + 320GB SATA2
Raidmax 450W PS
Windows 7 Ultimate

The whole installation went off with almost no issues at all. We installed all our drivers, installed Fallout: New Vegas and we thought we were set. We fire up FO and it's running okay with the setup we've got. Not bad. Then all of a sudden, it crashes! I get Windows back up and running, start checking logs and notice that both of my GPU's are running at 0% fan usage , and had overheated, causing the crash. I removed and re-installed drivers, x-fire profiles, and checked Google with no joy. I installed each card by itself and both work great on their own. No fan issues. Put them together and the fan fail starts anew. I even reloaded the GPU BIOS (both standard Sapphire and Apple EFI version) onto each card (thanks TechPowerUp!), but could not resolve the issue.

At this point, I am having to manually change the fan speed for both cards individually via RivaTuner every time we want to run a game. This is getting a little old. If I forget to do it before I start my game, I am due for a quick crash to at least the desktop, maybe a fully OS crash. This can't be good for the life of the fans on the cards, and without a fan profile for the cards, I am stuck at running the fan at 80-100% for any game I want to play, just to be safe.

Try to reformat and install all chipset, INF, AMD drivers and windows updates ect. Avoid 3rd party tools and see how it goes with various other games.

cant you just use msi ab and set a fan curv so when it hits a certain temp it raises the fan speed or just set them to like 40% whatever is quiet enugh to run 24/7.

^^AB fan profile sounds like a good start. I wonder if the cards being mac based... sounds like when the fans are supposed to ramp up, it gets reversed and the shut off.
