Recording video game play on TV

Probably a simple answer exists, but...

On my TV I play this really old game system that is linked through the regular video cables ("Video" under Input). How do I record the gameplay digitally?

Like RCA cables right? Look up capture cards.
Here are two, but I can't speak for either of them just examples.
PCI version
USB to RCA version

Ah that's what they're called... thanks

Now how do these work exactly? I know what they are, but I never actually used one. Is a program utilizing the card supposed to let me view the input or something? (i.e. I play my video game system with the program allowing me to see the input)
