Video Memory and Dual Monitor Display

Picking out a new GPU for my i5-2500K build. I plan on running 2, 23" 1920x1080p monitors, one for gaming and the other for streaming/videos/work. My only concern is that will running 2 displays at 1080p chew up the 1gb of video memory commonly found on nVidia graphics cards or will it be enough? I'm deciding between a GTX 560/570 and a Radeon 6950 (2gb) and 6970.

1GB will easily handle two monitors, really frame buffer is mostly used in games and that's for items such as AA, etc. You will be more than fine with a 560 or 570
