I am wanting to know if it would be worth the extra money to get 2 570's and sli them, or just get one 580, would i notice that much of a difference either way. Thanks

2 570s is going to stomp on a 580. Seeing as your motherboard can fit it, I'd say get 2 Asus Direct CU II 570s.

SLI 570 is obviously going to beat the 580, however I would opt for a faster single card (580) then run SLI on that in the future.

From a performance standpoint, the two 570s will provide higher frames per second in almost every instance.

A single GTX 580 is a fantastic card and will likely be more than enough unless you are looking to play higher res than 1080p. The scaling for the GTX 570s in SLI will be more noticeable at the higher resolutions.

What resolution do u game at? Low enough and ud really only need 1 570. I game at 1080p and it does 60+ on all the games I run so far. But from a power standpoint as others have said the 570s will perform better than a single 580.....they just cannot clock as high tho normally, some can and some can't.
