OK...

so power and heat don't seem to be a issue in your case...

therefore there is no disadvantage of the 480...

while the 570 has less VRAM... and since you are looking at 2560x1600...

i say that from experiance... that every bit of vram helps in highres/3d vision/Muli Screen setup..

i often play games with my 480s with my tri screen setup...

and i am using up to 1.4gbs of VRAM...

which is more then the 570 has...

So a 480 would be the best solution for you...

Thank you to hodges and everyone else who has added their input. I think I'm going to go with the GTX 480 Lightning. It is also cheaper than a 570 with any decent cooling solution to it and it has the HDMI / Display port should I decide to go that route.

On a side note you guys should watch this video its awesome.

MSI Afterburner...

it can monitor the VRAM usage...

also i have a Logitech G19 keyboard which MSI afterburner supports sending the info to...
