I can see why you feel that way, but I'm not so sure I agree. I guess it really depends on how you define, "grind." I think the most common definition I have seen is, "being forced into doing something you find boring to be able to do something you find fun." Something like wow locks you into it (NO GEAR, NO ICC.) but minecraft gives you some pretty easy ways around it. Since it is up to the player to decide where the line between fun and boring is, I'm not so sure I would consider it grindy. If you want to make something amazing, you can use the console commands to get whatever you want. If you want to work for it, you can take months to gather enough diamond to make a pyramid. Or you can do a little of both! Or even use creative mode or whatever to just have unlimited blocks.
There is a very fine line between grind/progression, and the gaming community will continue to argue over it for ever, without a doubt, so I guess it always comes down to the individual. I've spent 100's of hours on my single payer diablo 2 characters for no good reason, and I wouldn't consider that grind. Everyone else I know would call me insane for it.
