Upgrading from q8400 to SB. Thoughts? Z68? Advice?

So after having the revelation that games prefer Core clock over number of cores (smart huh?) I need an upgrade. Here's what I would keep from my current system:

750W PC Power & Cooling PSU
Antec 300 Illusion Case
2X1TB WD HDD in Raid-0
2X320GB WD Caviar in Raid-0 (as boot drive)
Gigabyte Radeon HD 5870 Eyefinity 6 Edition
Corsair H50 Cooler in push-pull configuration

I would really only be replacing the CPU, Mobo, and RAM.

I'm looking into the generic upgrade of:

P8P67 Pro
i5 2500k
2X4GB Mushkin Ram: http://www.newegg.com/Product/Produc...-099-_-Product

I chose the RAM because it has a lot more overclocking headroom than any G.Skill RAM at that price point.

I use this computer mostly for higher end gaming and video editing on PProCS5.

So here are my main concerns:

1. I'm REALLY hoping to get up to 5GHz and perhaps beyond with this setup. I've read a TON of stuff on this and I believe that the batch or stepping revision doesn't have much to do with it. Perhaps the motherboard also matters. But I believe I should be fine with my H50 once I apply some MX-4 to it. Any thoughts?
2. Should I go Z68? I realize all that I get is SSD caching and iGPU support, Will quick sync help at all in terms of video editing? I'm 99% sure it won't because I would need an nVidia GPU to get any more help. SSD caching seems cool, but my boot drive should be fast enough to beat it.
3. Will the overclock be more stable with 4 sticks of RAM in the Mobo? Or will just 2 in dual channel be fine?

1. I believe you're going to get ~75C w/ a 2500K @ 5Ghz.
2. Do you really need those extra features? If not, then there is no need to go to Z68.
3. Generally, the less sticks the better for the OC. So two sticks of dual channel would be better vs four.

It's generally recommended to have the least amount of sticks possible. When overclocking it can be an issue if one stick doesn't want to cooperate and reach higher clocks like the others. Less sticks means less places for something to go wrong.

Less stress on the IMC. Faster memory doesn't do squat for real world performance. BCLK multiplier is restricted heavily in Sandy Bridge platform so 1333 and 1600 is fast enough for a system build. Only reason to get 8GB of memory is if you really need it for applications. Otherwise 4GB is good enough for gaming. Z68 offers SSD caching and the use of the onboard GPU. If you don't ever plan on using the onboard GPU then it's a waste of money to jump onto Z68.

I think I'll stick with the p67 board. But is one board going to be better than the p8p67 for getting to 5GHZ (but in the same price range)? Or is it sufficient?

I've heard Z68 is much faster at video encoding than P67, but obviously you'll have to compare prices to figure out if it's worth it.

Do explain to me how changing motherboards changes how fast your videos are encoded?

Well I think it depends on the program. And if you look at some benchmarks, things can be a hair faster. But 20 seconds on encoding a video in Premiere isn't going to kill me.
