Which linux distro

we have a quad core 8 gigs of ram server with a 300gig hdd, currently its running ubuntu natty narwhal

unfortunately its not very stable and it comes preloaded with a bunch of stuff thats just not used

we need something that's extremely stable, is very lightweight is VNC freindly, the sticky mentioned Debian would be a good choice, is that good or is there something else someone would reccomend?

Try Debian then.
Never had any problems with Debian.
Ok, i had no problems with ubuntu but i only used the older versions which are stable.
The newer versions are bit buggy sometimes

our main concern with ubuntu is that occasionally it will simple "crash" and go back to the login screen which is a pain as it does not have a monitor of mouse or anything connected to it 99% of the time we just use vnc to do anything

"Crash"? That doesn't sound like a crash, it just sounds like the screen locking - you can change it in the Settings menu

Yeah sounds like the screensaver has the screen locked! If it doesn't then Debian is much more stable but a little more tedious to set up. I like it but honestly you can try anything.

well the screen "locks" while were using it as in ill click something and its gone, and everything we had open vanishes so i dont really consider that a screen saver lock or something

You've asked for two contradictory things here.

Installing the GUI necessarily installs a large quantity of software that generally isn't needed to run a server, but is needed to run, say, VNC.

You could manage the server via ssh from a command line, as servers are normally managed, and be free of all that bloat.

At the moment I'm building new server projects on Debian squeeze (6) because CentOS 6 is not yet available (and CentOS itself seems to be committing suicide). None get a GUI or anything even remotely associated with one.
