Ya 1 big rad should be fine.

BTW I have the same system as you on my desk right now,

Bought 4 mcw60,
a double rad and a single rad (Still in the mail)

EDIT:
did you get the sapphire extreme 5850's?

Yeah I did get the Sapphire Xtremes. I found a problem with my setup though, I bought an open box motherboard, and for some reason I can control the graphics fan speed on every PCI-e slot except the third one down. When the other cards ramp up fan speed, that one doesnt. I swapped cards, and the same thing happens, just the 3rd slot has problems. Im going to contact newegg about it tomorrow, and if I cant get a replacement from them or MSI (MSI 890fxa-gd70) Ill just get a refund from them and buy a new board from amazon. Sucks, but what can you do.

edit: im also pulling about 600w from the wall under full load.

I think for now ill hold off on buying watercooling gear, Ill redo the thermal paste on the cards with my own stuff, and try to get the board replaced. That should give a bit of room to overclock, and get my system performance from 60% up to around 85-90%.
