on stock volts though, to start off with what should I aim for ?

With these 580s in this folding rig, I have no trouble cranking the volts up. Problem is, anything over 990 core I get Unstable Machine errors so I have to back it down. They seem to like around 950-960 core.

As for stock volts, you should easily be able to hit 825-830 core.

I agree with 825-830 on stock volts. At max volts in MSI AB, which I believe is 1.15v and should be plenty safe with the excellent cooler on the card once you set a manual fan profile, you should be able to hit somewhere around 930-950+

What temps are sustainable on these cards?

As far as a custom fan profile to be used running the fan speed at 10% higher for each temp would be fine right? for example

40c > 50%
50 > 60%

Iv'e noticed the cooling on them are pretty strong though, so I guess its something im just going to have to test.

For my overclocked DCII 570 I use 40% from 0 till 70C then 55% at 80C then up to 100% at 88C. Of course you will have to see what works for you but in my experience on my overclocked 570 60% fan speed is more than enough for a high overclock running Furmark.
