Oh, and I did some Googling, and apparently Copeland compressors are recommended to have 20F superheat...I'm not sure if I need to follow that or not.

Hmmm .... I would keep the super heat on the high end of what I gave you . Get the unit working efficiently and don't try to go for "the gold" in one failed swoop . Also , the testing instructions I gave you is what is used on a system using a txv (thermal expansion valve) they should be close enough for a cap tube system such as yours .
Once you get the system working efficiently , then you can start fine tuning for "the gold"
Testing is a HUGE part of the process and skipping steps can lead to frustration
