Well your PSU can handle two GTX 560's SLI which is more performance than one GTX 580' You can also easily handle one GTX 580 but your PSU can't handle two GTX 580's in SLI.

So for maxing out your PSU without having to buy a 1000 watt PSU when you eventually want to SLI, go for the GTX 560's.

If your not into dealing with SLI config in your tower than naturally go with a GTX 580. You will be happy. I'm playing all my games, the most intensive graphical games at maxed settings and AA with no problems. The 560 pair SLI will do even better.
