Click "Save" and then click one of the numbered boxes on the left after overvolting? That's all I've ever had to do. When you click the box you saved it to, it should set that profile.

I have one profile set to 1.11v (with overclocks) and one set to 1.04 (at stock), so I know that it's possible to save settings.
