Two that stick out in my mind are:

on-board sound to an X-Fi Titanium Fatal1ty Professional sound card
HDD to SSD

Each of these upgrades was like night and day, and I can't imagine ever going back to on-board sound or HDDs.

Wow, alot of you are listing recent upgrades.

One of mine has to be one of my earlier PC replacements, going from some Compaq Deskpro with a Pentium 166MHz (no MMX), 32MB EDO RAM, 512k or 1MB onboard video (Cirrus Logic?), 1GB hard drive (probably 5x00 RPM), and Windows 95 to some sort of unnamed Whitebox with a Celeron 633MHz (on a Baby AT Gigabyte board), 128MB SDRAM, GeForce 4 MX440 w/AGP8x 64MB, 20GB 7200RPM hard drive, and Windows 98SE (later Windows XP). That wasn't even new or fast when I got it either. That might've been around ~2001 or 2002 or so? That was a big step.

If we only count single changes, there's probably two that come to mind.

One was going from a GeForce 4 MX440 w/AGP8x 64MB (underspecced, by the way) to a GeForce 4 Ti4200 w/AGP8x. Who would have thought going from a GeForce 4 to a GeForce 4 would be the biggest you could do. Still, the Pentium III 800MHz I had at the time held the latter back, so the following might top it.

Another was going from the GeForce 4 Ti4200 w/AGP8x (really onboard since the previous PC at the time had no AGP slot) to a GeForce 6800GS AGP 256MB. Far Cry and Doom 3, my goodness, they carried me away. The shaders in Far Cry and the lighting in Doom 3, my first tastes of DirectX 9 and cutting edge PC gaming.

A GeForce 8800GT is a slight bit quicker than a Radeon 5670, if I remember right. You are definitely seeing alot of bottlenecking (not that it needs to be said). The Radeon 4670 itself is probably being bottlenecked a bit.

1.) going from some cheap crappy onboard/super weak gfx to a Voodoo 4 4500 and getting a Duron and oc'ing it to 1 ghz .

2.) my first full build where I went from a sempron 3000+ and an x800 gto to an E8400 with a 4850 new case and monitor keyboard etc.. all with my own hard earned money.

Mine was going from a PII-400MHz/256MB/2xVoodoo2 SLI to a P4-630@4.2GHz/2GB/x850XT-PE. Even if you only measured the difference in clock speed the P4 was >10 times faster! Saying that my FPS in games increased is a complete understatement

But more recently, my best upgrades were putting SSDs in all my rigs and getting a 30" monitor.

HD 4670 crossfire to a GTX 460 netted a 100% increase in FPS. Then GTX 460 to HD 6950 was about another 50% increase.
