If I buy this:

will I be able to actually get 7.1 audio out of the optical port and hear it with these:

It looks to me the headphones take 2.0 stereo and upmix it to 7.1. So it doesn't really matter either way.

Why oh why oh why? Most of those "5.1" headphones just use two drivers and fake the surround sound. Even the ones that have multiple drivers, like the Turtle Beach HPA2(which I own), really don't function that great for surround sound.

You'll get better imaging out of higher quality stereo headphones and better sound quality too. I never use my HPA2 headset.

EDIT: That headset you linked to is only a stereo headset. There is one driver in each ear. They basically process the sound to make it seem like multichannel sound but the effect is very weak. These products are best avoided.

Some Dolby Headphone headsets (X4/X41) claim to support 7.1 sound, but it's just a creative simulation and is NOT true 7.1 sound.

Short answer: No.

Slightly more correct short answer: You won't get actual 7.1, and you will be completely wasting money on redundant hardware, but it will still function.

Long answer: Those are stereo (2.0) headphones with simulated (fake, software based) 7.1 effects. The soundstage is actually the same, the positioning is the same, and although it might SLIGHTLY trick your ears into some faux positional effects, the downside is that it has to horribly distort the audio to get those effects.
This means you get poor quality distorted 2.0 audio for more than it costs to get a decent pair of "normal" headphones which would give good quality 2.0 audio.
Additionally, that little brick on the line is a sound card in itself. It is what reprocessed the sound to give it that 3d effect and it pretty much renders your pc soundcard useless.
Lastly, all X-Fi cards have CMSS3D, which is pretty much the exact same software used in the in-line processors in all those "surround" headphones, only it works better and doesn't add a second layer of distortion from reprocessing already processed sound. If you really want the 3D effect from headphones and don't mind it garbling your audio to do so, just use CMSS3D on an x-fi card and a good "normal" headphone.

^ what he said. No headphones actually have 5.1 or 7.1 surround sound using only stereo. It's all just software to try and emulate it.

But if you want real 5.1 surround sound on a headset, take a look at the Psyko 5.1 gaming headset. It has 5 sound drivers on it that actually does 5.1, not just emulate it.
