OC that CPU to like 3.6GHz.
I can guarantee that'll speed up things, and give you a little project to boot, check everything's cushty, that PSU has like a 7yr warranty IIRC, and will last, aswell as being completely overkill for any single card system currently.
You can do that, and play with your old rig with a fresh lease of life for a bit longer, 'til IB comes out, or just take the plunge and get the new rig.
The 2500k is an amazing chip, and if you plan to upgrade again in 6months or whenever, you'll be forking out less.
Also, I recommend waiting another month or so before buying, with the BD's release around the corner, I'm willing to bet some price drops are imminent on Graphics and Processors alike, your 2500k and 560Ti should drop a bit.
PSU, Case, SSD etcetera, you can start getting though, be less of an impact on your wallet in one go if you get bit-by-bit.
