The reason i want alot of headroom is the possiblity when i save up enough and the 2011 socket comes out end of year i might go 3 sli 590 and really high overclock

If and when that happens, sell your PSU and buy one that can accommodate two GTX 590s. In the meantime, note that a 650W unit will comfortably run an LGA2011 system with a single GTX 590.

If I were building my rig today I would have gone with a good 850W like the AX850 but my 750W has been totally fine for two 560's. My only issue now is that I want to upgrade to SLI 580's and my HX750 appears to be on the edge for that setup....

so if i go corsair 850watt i will be fine for 560 and 570 sli i just dont want to screw myself

When LGA2011 comes out, GeForce GTX 590s will probably be bad buys. I imagine Keplar will be out or close to it (though I don't know the exact planned dates for that). If you have those plans, surre, you want more, but why would you drop the money on GeForce GTX 560 Ti/570 SLI, only to get GeForce GTX 590 tri SLI? Most people buy all of this overkill for SLI they may never get. Unless you FOR SURE do this, getting a 1000W PSU is a bad idea due to the extra cost, and lower efficiency you'll get while typically running it. I'm assuming a $200 1000W unit won't be as "good" as a 750W unit you could get with that money as well.

More than fine, that'd be fine for 580 SLI with room to spare. When you consider that a good 750W can also handle a pair of 580s.

The HX is better than the AX at some things, and vice versa. Considering the small price difference you might as well get the AX though, just to have the more modern product.

what u mean like whats better.. if you can name a few or different other then gold ratings.. I want to be happy with my choice

Nothing you would notice, but the HX has superior voltage regulation. It's also teetering on the upper edge of 80 Plus Silver so that it's almost as good as 80 Plus Gold in terms of efficiency. The AX850 has better ripple suppression and it's fully modular. That's about it. Honestly there is no way you'll be unhappy with either unit. Just decide depending on whether you want full modularity and don't mind spending a bit more.
