Using different versions of DirectX?

Sorry if this has been brought up before. I searched as much as I could and had to get this out there asap and I need a quick answer.

From what I know, if i have Win7 installed with DX11, I have DX9 and DX10 full functionality as well. I often see people saying "such and such problem is fixed when i run it with DX9..."

How do you choose which environment you want your game to run in? Like in BFBC2 or Crysis, for example? Only through cvars?

I'm asking cuz AMD tech support most recently asked me

"Are you playing the games in DX 9, 10 or 11 mode? Does selecting a lesser DX revision for the game help any?"

Yes if you have win7, you will have DX9,10 and 11. To use a DX11 in game in DX9, lower graphical settings and/or edit the game config (cfg) file using notepad (all within the game dir).
