I had 2 6870s running on a 550w PSU when i first got them. They worked ok at first but then the system began dying (like i'd pulled the plug) so i upgraded to a 775w. No problems after that. I think 600w minimum is recommended for CF for the 6800 series.

That depends on what Power Supply you had, but two 6850s would work just fine on a quality 550. Two 6870s would start to push it to over 90% of its rated spec at full load, so there could be issues like you had. A quality 650W is just fine for two 6870s with Over-volted CPU and OCed CPU, though.

You really shouldn't follow AMD's recommendation if you have a high-quality PSU, though. They measure assuming an "okay" quality one.

It was a Thermaltake TR2 RX 550W Modular PSU. I thought it may be ok but with 2 OCed GPUs, OCed CPU, hard drives, CD drive, fans, USB devices, etc., it seemed to have trouble coping.

If you want to power to Radeon HD 6850s reliably and for a low cost, I recommend you get an Antec NEO ECO 620C. It has great internal components and won't break a sweat with two 6850s, many peripherals, and an OCed CPU.
I ran two 6950s and two 5870s at 1GHz off this. I would highly recommend it
