You don't want low Vram GPUs for high res. I would suggest you shell out the cash for the 3GB GTX580 sli. GTX570s would down to its lowest knees on high res, 3x wouldn't make much difference. 1.5GB GTX580 would be better but 3GB would be best for now.

Like I said the 570's will be a bit faster, but you might run into more issues with 3 cards...
I couldn't be happier with my two 580's and don't have experience with 3 570's....
Dual 580's are simply the best bual GPU setup you can get.... period...

I wouldn't recommend the gtx 590 as it is esentially two underclocked 580's that will never achieve the same clocks (until Asus Mars II)...
Also with multi monitors, the GTX 570s aren't as good with 1.25GB RAM, might want to consider 580 3GB...

dont do tri-sli. the amount of power you will have will not equal having three cards. if that makes sense.... lol

for 3.1080p monitors, maybe you could get the gtx 590. it has three DVI outs.

for 3x1080p you definitely need memory than 1280MB. I'm running 3 480's and they crush everything at 2560x1600 max settings (which is equivalent number of pixels to 2x1080p) except crysis, in fact for most games 2 480's is sufficient. However I've seen games already get close to the memory limit. So personally I would pick up 2x580 3gb. 570's are a bad idea in terms of vram and in terms of the vrm's. If you want cheap performance and don't want the 3gb 580's (Both evga and palit do versions), pick up 2nd hand 480's, although power hungry they are a performance bargain, you could get 3 for < 700 easily. The other alternatives are the ati 6990/6970/6950 (flashed to a 6970). Those cards have 2gb of vram which will also help and are generally a better bang for the buck. For 1K you could get a 6990 and 6970 which will generally outperform 2 580's.

Another +1 for 2 x 580 3GB. With Surround, you'll definitely want that extra vram.

Honestly though, a couple of 560 2GB cards is going to give you pretty close to the same 'max playable settings' as 2 x 580 3GB ... for 1/2 the price. If it were me, that's what I'd go with ... then drop the savings onto getting really nice IPS monitors, or maybe a few SSD's in RAID-0

But that's just me

And I'd bring up the AMD options, but since you didn't ask ...
