People expecting GTX 580 and GTX 570's need to stop. If Sony were to sell the Console at cost, they would be losing alot of money, as you need to take other things into consideration like Marketing/Advertising/R&D.
RAM isn't just about textures. More RAM is useful because the developers can load a lot more into memory which means faster loading times throughout the game, and higher framerates when loading new meshes and physics. It also means more of a game world can exist at a time, which allows for environments are more lush and detailed.
Unless you were talking about VRAM, in which case 2GB is indeed probably enough for 1080p.
