I have to agree that a 3GB version of the GTX580 is a good thing...
BUT LOOK AT THE PRICE!!!!

Also, at 1680 x1050 or 1920 X 1080, the SLI 560Ti is from 20% to 40% faster...

IM geting 90-120 fps in bc2 @ 1080p @ 120hz. so i dont care if the 2 560s are faster pain in the butt to setup and Hope u dont get micro shudder or a game that dose not play good whit sli . Single card way to go.

back on topic, i would recommend getting the GTX 580 first. later on in like a year, if u feel like u want to upgrade, you can get another 580 for like 1/2 the price and go SLI. another advantage is 1.5 GB ram instead of the standard 1 GB on the 560. if u have enough for a 580 then by all means go for it.
and no, when running in SLI your usable VRAM will be of one card (in the case of GTX 560 TI sli the usable ram is 1 GB)

if ur res is less than or equal to 1920x1080, 580s will be fine. if ur res is higher, you may want to disable aa in metro 2033. the rest of the games will run fine.

im planning to go sli after picking up an opened box asus gtx 560ti...but would rather jump on a 580 since single card is easier to fix if something goes wrong...

Go with a single card, SLI and Crossfire somtimes have compadbilty issues
