FPS, RPG, RTS, and... hmm ... what else... that's mostly it... the 3 genres where Keyboard and Mouse is a MUST...

while, flight, driving, platforming, sports, etc are better with a controller...

and since XBOX360 is made by Microsoft, which most likely also makes your OS, it's very basic plug-and-play compatible, and VERY easy to set up, and a LOT of Games For Windows Live games, even change the on-screen icons, etc. to match your 360 gamepad buttons by itself, when it's plugged in...
of course, like a few previous posters said, if you want the most hardcore experience for racing, use a wheel/pedal set, and for flight, a flightstick is a must

PS3 controller isn't directly compatible, but there are a lot of tutorials and guides out there to easily configure it and install a simple driver to make it work without much hassle...

Keyboard and mouse is probably the most versatile way, but anything that involves vehicles is a cry for an analogue controller in my opinion.
