Need some help with a build/cost

Hi My computer is getting old and want to just configure it into a hackintosh, hopefully it will work well, seems to be 'okay' right now. not sure about updates.

Anyways, I'm trying to build a decent computer (will do gaming and some video editing). My limit is probably $1000, but would prefer lower.

I'm thinking intel mainly incase I did want to hackintosh this later for my family, but doubt it.

Below is where I would like your input. I think I have everything there. after the ... if possible could you give me an idea of a good price for the item. (eg. SSD ... $130 or cheaper is a good deal for a 120GB SSD)
If Any is stated, could you suggest a good cpu and a good price.
I'm thinking buying everything retail and not second hand.

CPU: Any...
looking for i5 or i7 not sure which is better... and I am currently using a E8400 @ stock speed.

Mobo: Any...
Thinking about usb 3.0 with it

Graphics: Any...
Anything with a good price to effectiveness ratio

RAM: 8gb ddr3 ...
I'm thinking 8gb will be enough or should I go 6GB for ddr3 for 'triple channel'

HDD: 120GB SSD ... *I'm thinking $1.25/GB is a good deal or close to.
I will add some normal 2TB or 1TB drives to this as well.

PSU: Any...
Not sure how much power I 'need'. I'm thinking brand wise. Corsair, OCZ or Seasonic...

Case: Any...
Currently have a Antec 900
I could buy a cheaper case and switch out the inners if the antec 900 is still 'good'. or go for something better. Don't want to spend too much on this. But do want a good airflow case.

Cooling: Any...
Whatever is affordable and effective.
