2 is crap as if you split over two for a shooting game the cross-hair is in the middle of the two screens, thus you can see, 3 is the way to go.

Me? i can't have 3 as my room and desk is not big enough

this plus a couple hundered more for water cooling and you're set

I would be looking at

i7 2600k
Gigabyte UD7
Noctua DH14 or similar cooler
8gb of high quality RAM
2x MSI gtx 580 Lightning
1000W gold Rated PSU
A good case (haf-X for performance, bitfenix Colossus for looks + quietness)

There is really no need for watercooling. High-end air cooling does the job fine, and it saves you alot of hassles
