The OP could buy an nf200 board for the 2600k if they are worried about pci-x lanes, it adds latency to the bus though but in general you should be fine. Unless the OP is definitely wanting to run SLI I would stick with the 2600k.
I do plan on getting 2x GTX 560s and SLI them this weekend... is there something i need to know about my setup before i buy them

If you go sli the PCI-E will split in x8/x8 and overall performance decrease wouldn't be noticable. So no reall need to get board with NF200 unles you're planning quad sli.

Not really. Just just attempt to use any more PCI lanes or you will begin to see decreased performance from your GPU's.

the thing is yes SB beats X58 at 8x true, with NF200 really is only for 3 way SLI or 3 cards on SB. Never the less at resolutions higher than 1900x1600 you will see an impact of being at 8x rather than at 16x. You just gott have a monitor that is like 2600x1600 and run everything at its highest. Him being a video editor+ gamer would probably have a big monitor. You wouldn't notice the difference in performance between a 950 and a 2600K, in real life at least. The BLCK from the 950 would also help with video editing, so would triple channel RAM.
