I'll be doing a black & blue theme throughout the case, possibly with individually sleeved cables but not at first. So I'm wanting to get some decent looking blue LED fans.

The stats on these look pretty good.

That fan will do! They're great for radiators. Noisy if there's no fan controller, so you must have one.
