So I want to build a new rig at some point, ideally Intel CPU

What's considered a great uber-setup at the moment?

About a year and a half ago, I bought the system that I still use today (via my sig) -- but I'd like to buy something even more powerful at some point in the next year or two. I've been a bit out of the loop. Which processors/video cards/etc are considered top-end nowadays? Are the new nVidia cards better than the ATIs now or vice-versa?

I understand that it's not cost-effective to go high-end, but there are two things in life I enjoy splurging on: Fine dining, and computers.

What would an example of an awesome gratuitous setup be? Would solid states be worthwhile? Sandy/Ivy Bridge? SLI? Water cooling or air cooling (I hate dust, but am unsure if water cooling is worth it). Let me know your thoughts -- thanks!

For just an "uber-rig", you'd want a 2600K and GTX 580. Scale as you please

Are both of those top of the line at the moment? I admit I am currently a big ignorant about the bleeding edge of processors and video hardware. I know there's a GTX 590 -- is that better than the 580 at all? What of the ATI cards?

If you're not in a hurry, wait till Socket 2011 comes out at the end of the year or beginning of next year.

The GTX 580 is currently the single most powerful single GPU card. The GTX 590 has dual 580 cores, and has overclocking issues. Technically, the 590 is better, but for all intents and purposes, the GTX 580 would be your best bet.

As for the 2600K, it's currently the best bang for the buck CPU. Of course, Intel offers the hex core 990x for $1000, but the 2600K would certainly be the best for a normal power user. 5.0GHz is obtainable with air cooling.

When you say overclocking issues, do you mean relative to what it should be able to do, two 580's considered? Is it technically better to just SLI two 580's and outmuscle a 590?

Yes. 590's are prone to blowing up - in quite the literal term. SLI'd 580's will be better than a 590. But it will also be more expensive.

Intel will launch a new socket LGA2011 at the end of this year, which is for Sandy Bridge cpu's initially. March/april 2012 they will launch Ivy Bridge which will be for socket LGA1155 initially. So if you wait till 2nd half 2012 Intel will launch Ivy Bridge for LGA2011 which will be the bleeding edge by then.
