IMO, replace i5 2500k for i7 2600k if you're going to do video editing. It's going to help speed things up tremendously.

And if you're running 1920x1080 resolution, a GTX 560 Ti would be an excellent. complimentary. And you're missing the ram as well

i think 4GB Gskill would work out great as well

Especially GTA4, Bad Company 2 and the upcoming BF3, MW3.. maybe not MW3, but you know, the CPU hungry games

How much encoding will you be doing? If just a little then it will be fine. If your going to do a bunch then the 2600k will pay for it's self over a few months. I got a 980x because I do a lot of rendering with Inventor and the extra cores help.

yes, the i5 2500k is no slouch, but video editors prefer the 2600k for the hyper threading and better L2 cache.

It's pretty fun to me tho, you said you're on a 1k budget, but with the parts that you have chose, the machine shouldn't coast more than $900

oh indeed (read that in Omar's voice from The Wire) An OC'd 2500k is awesome, but he's going to wish he spend that extra $100 on the 2600k.
