Looking for help/suggestions for first build

Starting my first computer build and have most of the parts picked out and was just wanting some input from more experienced builders to make sure I am on the right track.

Now I am not trying to build the ultimate machine just wanting a summer project I set my budget for the build to be at around $1000, can be more if needed. I have researched some of the best middle to high side of parts out there and have came up with this:

Motherboard: Asus P8P67 Pro B3 189.99
Processor: Intel Core i7-2600K, Quad Core, 8MB L3 Cache, 3.40 GHz, Socket H2 (LGA1155) 314.99
RAM: actually need help selecting (thinking between 4-8gig), wanting input to see if dual channel is worth it and if so a recommended brand and size (note I believe the P8P67 only allows dual channel not tri)
Video Card: Diamond Radeon HD 5850 186.79 or GeForce GTX560 259.99
Sound Card: Creative Labs Sound Blaster X-Fi XtremeGamer 89.99
Hard Drive: Western Digital 500GB, 7200 rpm, 32MB, SATA-3G 54.99
DVD Burner: Asus DRW-24B1ST 24X 21.99
Power Supply: Kingwin 1000-Watt, ATX, SLI-Ready, Six 12V Rails, 80Plus 149.99
Case: Thermaltake Armor A60 Gaming Mid-Tower Case 49.99

Just looking to be able to game with most if not all the settings on high while having an easy first time build. Any and all input is greatly appreciated.

Do you have a frys or microcenter around your area? You could get the 2600k for much cheaper for 180+tax. Maybe you could ask someone from this site to pick one up for you. You should also check the online deals section from this website. There are sales for video cards if you check pretty often. I would personally go with 8. Sure you prob wont go over 4gb of ram but better safe than sorry.

Okay so did a little more research and have changed the build slightly (and consequently the price).

Are you using this PC just for gaming/normal use? If so, just get an i5-2500K http://www.microcenter.com/single_pr...uct_id=0354589. Cheaper, can be OCd if you want.

PSU: http://www.newegg.com/Product/Produc...82E16817139020 should be enough for 1 GPU setup, I think it can even handle two GPUs.
