Yes if you can make use of the hyper threading and 2MB of extra L3 cache - the i7 you could say destroys the i5 when it comes to doing workstation-based apps, encoding, rendering etc, thanks to HT. So if you're going to do any of those things pretty heavily or on a regular basis, the i7 should be best.
Other than that, if it's simply for gaming and nothing too CPU intensive and you really don't want to whip out too much cash, than the i5 would offer better bang for the buck since it's not *that* significantly slower than the i7.
@OP - I think the HT and the extra cache from the i7 should definitely prove more beneficial than the i5 in your circumstances of having so much game windows up
