Help overclocking my HIS HD Radeon 4850 with AMD Overdrive?

Card: HIS HD Radeon 4850 512
Processor: Intel E8400 @Stock
Current (default) settings: AMD Overdrive enabled, GPU clock 200, Mem clock 500, Temp 42C (idle)

So I'm playing the Witcher 2 and wanted to see if I could squeeze any more performance out of this baby.

First of all, I'm a little confused. Do graphics cards have variable clock settings? By default, mine is set to 200 mHz GPU and 500 Mhz memory clock. Does that go up while I'm gaming? If so, where do I reach the point where I'm actually overclocking?

So I read that I could overclock this card to 790/1100 easy. I started by foolishly setting both to this max settings and crashed my computer. One system restore later, I carefully bumped up each slider separately and found their limits. It came out to be about 770/905. But upon using these settings, my game was running much slower than before.

What am I missing?

Use MSI afterburner and play with that. I have no idea what you are doing in Overdrive however yes, your card downclocks itself to save power with no performance impact.
