ive asked that myself and tried to remount mine at least 5 times, different ways of thermal paste application, but i still get the same results on the cores, core 0 always higher than the rest.

No. It usually has nothing to do with the cooler. All chips have certain cores that run hotter then other. Just part of the manufacturing process. Sure sometimes it can be an improperly mounted cooler, but then it's very noticeable.

My hottest core is core #2 and it runs at 68C when running prime95. My coolest core is #4 and it runs at 62C. But usually they never see those temperatures because games are not that demanding on the CPU's. My GPU's however probably add a few degrees to my CPU cooler just through heat soak.

My idle temps are kinda funky...

Core 0: 35C
Core 1: 36C
Core 2: 41C (always the hottest core even in load)
Core 3: 31C

weird, but I guess its normal?

Antec 300 with 4 fans (2 in 2 out) and a Hyper 212+ and Arctic Silver 5.

I was also worried that my temps were weird, but after reading more and more about the differences everyone has in common with temperatures, my mind is a bit more at ease. I did pick up some mx-4 in case it bugs me too much, but it seems it won't make that much of a difference if I go through the re-seating either way.

My i5 2500k idle temps seems to sit around 31c, 37c, 38c, 34c. And the air is a tiny bit warm in here. Running IntelBurnTest for 5 standard runs gives me Temps of 53c, 60c, 63c, 56c. I'm no expert but from reading around these seem fine. Does anyone think I should bother re-seating my heatsink with some mx-4 or are these temps acceptable?

Pretty normal, I remember I asked the same question a while back. Core 2 is my hottest followed by core 3. Core 1 and 4 just like to chill out.
