he doesnt need to do that if hes just keeping the one 560ti (if he gets it) a decent 550 with a nice rail will do just fine

Well, as little as possible really.. lets see under a grand. The main thing though, is value

Also, would it be better to go dual video card, or one ultra sick vid card?

I don't like that supercombo. Actually the other parts are fine, just the PSU I have a lot of problem with. Not very good quality. I could go further and suggest some better individual items for the same (lower?) price but I'll leave it at that, since I haven't any details from the original poster.

I haven't any details on what budget you want and what level of expandability you want, so I'm going to work based on assumptions. The upgrades I recommend:
Phenom II x4 955 - $114 shipped (no need to tank $$$ and $$$ on an AMD processor; save that for the FX Series launch this summer). Lower end processors such as Athlon II x3 may also be quite fine actually.
ASUS M5A97 EVO - $118 shipped (900 series/AM3+ expandability; note that SLI/CFX is 16x-4x and unable to split to 8x-8x, 4x will bottleneck cards above a 5770 in performance)
Antec Earthwatts 650 Green or Rosewill Green 530W - great PSUs to upgrade to in wattage or quality or both
