Run them at 8x/8x you won't even see a difference.
With the bottleneck you had with your dual core, you'll see nothing but improvements.

Do you mean the NF200 boards? Well the chipset duplicates the instructions to give the appearance of 32 lanes, as opposed to the physical 16...

What happens to a dual GPU board on 16x?

So you are saying a Duel GPU card runs internally at 16x16x but when it hits the PCI-E x16 it splits down to x8x8? so if I place these into x8x8 PCI-E they split down to x4x4 ?

you can think of an NF200 kind of like a Dam, it fills up with 16x and then waits and fills with another 16x until it has enough and then gives out 32x. It causes a small delay, but nothing you will ever notice, just a small latency issue with single cards compared to single card setup without the NF200. Still 2 way SLi with SB with NF200 is faster than X58 without NF200. , but in most cases is preferable with SB if you are going to go with two high end nvidia cards and OC them, or use a very high resolution monitor like 2600x1600, other wise you have to use an NF200 board for 3 way SLI, and no Sandybridge board support 4 cards.
