Help me choose between these two systems

Uses: Gaming (as long as it runs BC2 @60FPS+ while Fraps rec then I'm happy), watching Blu-ray, surfing web, work (MS Office, word, powerpoint, excel), music storage, video editing, fraps, 3d animation & modeling.

WS Revo or Sabertooth or Maximus IV Extreme or Maximus IV Extreme-Z or P8Z68-V Pro
1-2 SSD (will just velcro them on back of mobo tray)
2-3 HDD
Soundcard
80+ Platinum PSU, sleeved
1x or 2x 580/6970, 1x 590/6990

Questions:
P67 or Z68?
2500K or 2600K?
Wait for Bulldozer? (If it arrives after BF3 then no)
What single card solution will max out all games (obviously excluding Crysis 1 & Metro)?
Are the 590/6990 REALLY loud?

I will be pushing either the 2500K or the 2600K to 4.8, 24/7, ~1.4v.
Cooling-ATX build: NH-C14, NH-D14, Antec Kuhler 902 (2x Noctua fans)

Fan choices: I will be doing a all Noctua build, just for the hell of it since I like the color scheme.

So yeah, little mATX rig with little expansion or a normal sized ATX rig with room for 2nd card and room for D14.

I'm not sure if it still does, but the GTX590 used to either blow up or catch fire under load.

I wish I could answer your component-specific questions, but I haven't had enough experience with any of it to say anything useful.

What I can say is go for the ATX build. Create a positive air pressure in the case and your gfx card will get away with a lower fan rpm = quieter.

The big case will allow a quieter build in general; you'll get better air flow without trying so hard. The mATX case will get awfully crowded running five drives and potentially two gfx cards, and your fans will have to work harder to achieve the same effect.

Is there a way to fit HDD's into the 5.25 bays? For the 9F, I plan to remove the HDD cage for better airflow.

P67 or Z68?
There is hardly any difference, only a couple of features (I believe Z68 has some feature for faster encoding) but it is really up to you. My advice is to simply look at the Z68 motherboard and P67 motherboard and decide based on PCI slot layout etc, as it really doesn't matter which chipset you choose.
2500K or 2600K?
For gaming the 2600k has no advantage over the 2500k. However, if you are running multi-threaded apps (video editing and 3d modelling) then the 2600k will have an advantage because it has hyper threading so I would go with the 2600k.

I don't know much about the bulldozer and if it will be better than sandybridge processors but I don't think it's arriving very soon, imo an overclocked 2600k will be fine and will easily tear through anything you throw at it.

The GTX 580 will be able to max out almost all games with the exception of games like Metro 2033 and Crysis. BF2 it will have no problem. DO NOT get the GTX 590, it has too many issues and is very noisy. The 6990 is also very noisy. My advice would be to stick with single core and go with the GTX 580, then in the future when games become more demanding you can always buy a second one for SLI.

Also, get a normal sized ATX rig if you don't mind having a huge rig in your room. It will benefit greatly from better airflow and nothing will be cramped up.
