Gaming/Video Editing Rig Help Please

I have a 1280x1024 res monitor (NEC MultiSync LCD1860NX) and I'm building a new rig, aimed at moderate amounts of 3D rendering and use of After Effects and Premiere Pro. I have Windows 7, so I don't need to buy that, and I have a DVD/CD-ROM Burner and an HDD. So that spares a good $220, but I'm still looking for the other main components, such as CPU, Mobo, GPU, RAM, PSU, etc. My budget is preferably in the range of $700-800, but if it goes a little over, like, say, 50$ over, that's acceptable. Unfortunately, I'm a complete nub at building computers, so I need your guys' advice. The current components I have spec'ed out are:

Now I'm having a hard time with picking out the right GPU for my monitor's res (1280x1024), so I was wondering if you guys could help me spec out the best card for the best price. I was thinking maybe a Radeon HD 6950 or maybe a GTX 560 TI. I won't be able to pick a PSU until I know what GPU to choose. Also, if you guys see any glaring or stupid nub errors in my build so far, please be so kind as to point them out . And if you could recommend better parts for the same prices, that would be extremely helpful.

Well at that resolution even a ($140) 6850 would be enough. So maybe you should consider a new 1080p monitor perhaps with the saved money (perhaps something like this).
