All of the memory is the exact same. So there is absolutely no reason to believe (or even have to ask) that simply using 2 sticks instead of 3 would work. Of course it would work.

Of course you are right. There is no physical difference, but the kits are marketed and sold as Dual and Triple channel (so from that stand point, there is Dual and Triple channel memory). Someone who is not as familiar with RAM may not easily see through the marketing labels.
